Also what length cable does the sensor have and how far can it be extended. I want to track my RV refrigerator temperatures. I will be using a MultiPlus and Touch 50 screen.

Yes, the cable can be extended. See also the data sheet: Temperature Sensors
The temperature sensor used for the GX family is the LM335x type. You could use the Victron model or make up your own and extending the cable is not a problem. The only issue I've found with the Victron or the uncalibrated LM335 is the accuracy which can be up to +/- 6 C. But the good news it can be calibrated by using the LM335 datasheet circuit to <1C without too much trouble which I've done.
No problem, I use it to monitor my fridge.
