My Victron Orion DC-DC charger uses the vehicle battery when in standby (for the Bluetooth connection among other things). If I fit a switch to the remote connection will that stop standby power usage until I switch it back on again? I am worried that the vehicle battery will discharge too much when the van is stationary for a few weeks at a time.

no. The remote switch will only turn the charger off. The unit itself still get powered from the battery. But this idle current is only a few milliamps. Nothing to worry about.
