Can I mix a couple of 75/15 solar controllers and a couple of 100/30 solar controllers into the same system and they all communication properly? Right now I have all 75/15 controllers and they work great together but need a couple of bigger controllers,

Yip, as long as you have enough ports to connect them, assuming you're using a GX.
Each needs its own panels.
Just connecting to the bus bars and using the App to set and monitor it. Don't have a GX, it works good now but didn't know if all the controllers had to be the exact same model.
