Can someone explain the reasoning behind these having 2 battery positive and 2 battery negative input terminals as opposed to a single larger gauge of each?

For higher power inverters it is more practical, economical and efficient to rather use two smaller gauge feeds in parallel, than one enormous one.
Most batteries, or modular packs will use the same methodology for their wiring.
