Can connect via bluetooth on iOS and android. MacOS cannot detect charger via app or system. Any ideas? Have insured no other device is connected. Still cannot pair on Mac.

Unfortunately, I think the Bluetooth Hardware in your Mac (Macbook Pro 15" Late 2011) is too old (v2.1). You need to have Bluetooth v4.0 hardware in your Mac for it to work.
The earliest supported macOS version is: 10.10 (OS X Yosemite).
(Downloads for VictronConnect for users of macOS X 10.9 (OS X Mavericks) is still available in the archive - but unsupported.)
To connect to a Victron device over Bluetooth, rather then via USB, the Mac needs to have Bluetooth 4.0 aka Bluetooth Smart.

Unfortunately, the late 2011 MacBook Pro was the last one, before Bluetooth 4.0.
There is a possibility to upgrade the airport card:
