Fake Cerbo GX (PI3) and MQTT

I have setup a PI to run as a fake Cerbo GX and it's working fairly well. I'm trying to pull data from it via MQTT. This is all working mostly fine and all went quite smoothly. I'm quite impressed with how easy this all was to do. The issue is I have is sometimes I can get this huge array of data out, and other times there is nothing there. The image is what I am currently getting. Second image is something like what I get when it's not working. I don't have a screenshot of it not working and I'm not sure how to trigger it between working and not working but it was something like that.
