Hello, I'm currently living off-grid and using a Phoenix 48/1200 inverter. I'm looking to expand my system. Can I purchase another Phoenix 48/1200 inverter and connect it using AC coupling?

No this does not work.
However, the Phoenix Inverter 48/1200 is a discontinued model and I suggest you to upgrade to a 48/3000 model or even a MultiPlus which is also a charger.
