I see where to download firmware for the Cerbo GX (the Einstein version) but I don't see any of the firmware that says "large" so I'm not sure I'm looking in the right place. I'd like to download the file to the SD card and update locally since my Cerbo is not internet connected.

yes, just download the appropriate file from: http://updates.victronenergy.com/feeds/venus/ and copy it to an SD card or USB memory stick.
When you insert the card/stick into Cerbo, it will alert you to the presence of the software update file and you can then install it.
