Frustrating that the shunt doesn't come with an enclosure. Or am I wrong?
No - there is a circuit board on the shunt and a number of conections/terminals that won't like that very much.
You could consider mounting the shunt in a sealed clear project box with all wiring routed through cable glands.
However as some condensation can still possibly form inside the sealed box, it may be a good idea to mitigate this by drilling a small hole somewhere on the bottom where water can't enter. This will allow the inside & outside air to equilise somewhat.
