Is this possible with the accessory kit or does it work only for metal contact (battery etc)? And what about Gerbo temp probe? Or do you need a Ruuvi tag etc?

It clamps on the battery terminal. Temp reported is thus both when in equilibrium, and if there's a difference, it will tend towards air temp due to the slower change in temp of the batteries compared to air.
I meant that if you don't connect it to battery but leave hanging in air or drop in water?
Okay so followup question, how can you monitor air or water temp? Anyone built a system for that?
You can use the Victron temperature probe the connects to Cerbo although I'm not sure if it is waterproof enough to submerge.
Those temperature sensors are LM355. I've made these relatively waterproof with a length of heat shrink tubing crimped at the end while still hot.
