For the life of me, I can't figure out in VE Connect which value corresponds to changing the input current limit in the remote controls so I can increase this to 70amps on the input current limit.

It is in the name... 24/3000/70-50
70 refers to the DC max charging amps from grid. So what the inverter sends to the battery directly.
So 70ax24v= 1680W of battery charging max assuming no other restrictions and derating.
50 is the max AC input current. The max it will let in is 50A grid/generator input, some will charge the battery (to the max of 70A x battery voltage) the rest is for the 3000va loads the inverter can run.
This ist the AC input current not the DC charging current.
