Hello, is there a cover available for the shunt so as to avoid any accidental short with the large exposed bolts of the shunt? Mine is mounted near 12v batteries as well as a positive bus terminal.

Not as far as I know, there isn't one listed on the victron energy web site that I can find.
The shunt should be earthed/grounded on the load side, so the risk is form positive terminals, these should always be covered orinsulated and power off when any work is carried put. If you do cover with a diy solution, allow plenty of ventilation.
Some have used a Blue Sea 2719 MaxiBus cover as an enclosure for Victron shunts https://www.bluesea.com/products/2719/MaxiBus_Insulating_Cover_for_PN_2127_and_2128
Also, the Victron high voltage shunts (BMV-700H & BMV-710H Smart) come in a sealed enclosure with cable glands https://www.victronenergy.com/battery-monitors/bmv-700h
I had the same concerns. My installation is in a very tight space (camper van) and is prone to accidental shorts. I came up with these enclosures which are made of Polycarbonate (for high-temp resistance) and are not completely closed (to allow venting):
