I am contemplating the 100/20 or the 100/30 charge controller. The 100/20 has some built-in protections, which the 100/30 does not. How practical are those protections and can they be easily added to the 100/30 charge controller?

What protections are you thinking of?
The main difference I can think of is the load output terminals.
Low voltage load disconnect
Battery reverse polarity
Output short circuit
Doesn't the 100/20 have fuses that are user-replaceable, where the 100/30 needs to be sent in for replacement?
Sure, but the 100/30 has lots of protection features that don't require a fuse, so that is why there is not one there.
"Over-temperature protection and power derating when temperature is high. PV short circuit and PV reverse polarity protection. PV reverse current protection."
Basically, have do do something really special to destroy this charge controller.
PV over voltage will destroy almost all MPPT's and probably reverse battery, and even a fuse would be too slow for this type of (user / installer) fault anyway.
