I would like to monitor my inverter; it's around 13 year old Phoenix Compact multiplus 12v 1200va 50AMP. Ideally via a pi; but PC if necessary. What hardware/cable do I need (a little late Christmas present for the boat)?

This is an old VE.9bit device. Your options are very limited in this case.
You'd need a MKII dongle to communicate with VE.9bit devices, MK3 will not work.
With the MKII, you would be able to use VE.Configure on a Windows PC to adjust the settings and see basic operating parameters. That is about as much as these older devices will support. Connection to CergoGX or VenusGX or VenusOS on RPi will not work.
The cable is a normal RJ45 patch cable but you would also need a MK2 Interface to USB.
I think you can connect it to a Pi. I'm not sure if you need the old VE.config or the new, you can only test that.
