How is this possible, 4 x 350w LG panels, 2 in series each set going to a Victron MPPT 100/50, can these panels produce that much over their rating?

Cool temps and cloud (or other) edging.
Ratings are based on STC conditions. Colder temps deliver higher power.
My 2970W Array recently clocked 3700W due to the same. Partly cloudy and cold day. Shaded panels would cool well below 25°C, then they would be hit with full sun. If the sun stayed on them, they would warm up a bit and reduce their output.
I expect something similar happened in your situation.
