The new Lynx Smart BMS seems like a nice addition to the lynx family, however when looking thru the manual I'm not able to confirm if its also possible to use the Lynx Smart BMS with non Victron lithium batteries?

from the manual: The Lynx Smart BMS is a dedicated Battery Management System for Victron Lithium Smart Batteries.
It does not work with non Victron batteries.
But, if not using a Victron battery, can it still show current flow, SOC, time to go, etc. by bluetooth?
The contactor can only be used if connected to a Victron battery?

unfortunately this will not work. The Lynx Smart BMS requires Victron Smart Lithium batteries connected through their M8 cable connected. Without these cables the BMS will not work properly as a result of missing data from the battery. And that's also the reason why the shunt part will not work (no SOC) because the contactor most probably will remain open and no current flow.
