i have a 250/100..it says 5800 watts max but im thinking of doing this the volts are 145, the amps are 68 but the watts are up there like 7420 watts does the watts really matter? if you keep the amps/volts under the max?

The first number is the maximum PV voltage and the second one is the maximum battery charging current.
So 100A x your battery voltage = maximum PV power.

Yes, you can do like you say and 'overclock' your panels. On the proviso that you don't exceed the Voc and the Isc. Not to be confused with Vmp and Imp. Your 68A is close to the specified 70A Isc, but would be ok if you have the correct figure.
The mppt will cap at 100A into the battery, which will be 48V nominal, and mightn't ever see much above 58V, but you won't ever see 7420W produced.
Doing this can help make your charge days more consistent in an offgrid setup.
