Can someone advise how to set this values ?
Even, a free set value are possible.

You don't have to change this settings unless you have a different shunt.
The shunt delivered with the BMV is 500A/50mV.
The shunt current is the current your BMV shunt is rated at. Which for the standard BMV shunt is 500A. These can be upgraded for bigger systems - https://www.victronenergy.com/accessories/shunt-600a so then you would change this setting.
The shunt voltage is really the voltage drop over the shunt this helps with calculations. This is a customizable thing as you can - if you are a person who experiments use it on different shunts and sometimes their rating is a bit different.
So in short, as Matthias said, these are usually two settings most users do not change.
