I am installing a Victron BMW 712 in my RV
I have 2 x litium batteries in parallel.
I will want to install the temperature sensor for the BMW712.
To wich battery do I mount the temp sensor to, or can I install 1 temp sensor for each battery?

With batteries in parallel, you can mount it on the positive terminal of either battery.
If one of your batteries has more of its sides exposed to the environment, its temperature may vary more than one that is tucked snugly away. In that case mount the temperature sensor on the more exposed one.
