I read that this product has over current protection
Does this mean it will disconnect the battery banks when it senses more then 120 amps? Or 180 amps? Or will it just limit the current that flows through?

Hi @gal-ecker, welcome to the Community!
Where did you read that the Cyrix offers overcurrent protection? This is, unfortunately, not true. The Cyrix offers overvoltage protection, but not overcurrent protection - thus why it's quite important to size it appropriately to your system so you don't burn it out.
