If the two different strings are subject to different solar irradiance the voltages of each string will be different.
Remember watts is volts multiplied by amps. The mppt will track better and produce more power of the voltages of both stings are the same.
The scenario you propose will work to some degree, but you will not get as good yeilds. (Depending on how different your angles are). As the maximum power point will not be able to be tracked as the one will be lower than the other. Unlike if you had two separate mppts.
