Current set up has 1 x 110ah LA, there’s only room for one battery! Looking at a 220ah Victron gel but at £500 it’s not worth a guess.
(The inverter is overkill as it’s only running a 1200 w hairdryer)

I don't think you've provided enough information to help spec a battery. You need to figure out the daily watt-hour needs. For example the hair drier once a day for 5 minutes is 1200 x 5 / 60 = 100 watt hours or 8.3 amp-hours at 12 volts.. Next, you have not specified any means of charging the battery. Continuing the example: 8.3 AH draw from a 110 AH battery would last you 110 / 2 / 8.3 = 6.6 days.
Now you need to factor in charging. You'd need to run a charger capable of say 35 amps for 2 hours every 6 days to keep going.
Upgrading to a 200 AH battery would double your run and charging times: 12 days of hair drier usage with a recharge for 4 hours.
Charge times could of course be broken up.
If you have other DC loads on the battery (lights for example), those need to be included in your daily watt-hour needs.
Inverter idle current is also a factor. So if it's on 24/7 then expect 11 watts continuous or 132 watt-ours per day (more than the hair drier!). But you can always turn it off when done with the hair drier.
