On a three phase system, can I configure the inverters separately on VE config (grid code, ESS etc.) and firmware updates before going to site? Then once on site do the phase (master, slave) configuration as I don't have three phase at my workshop?

You can set it up without having 3 phases in your workshop: just use battery power.
But of course you can also setup 3 phase later, just not via remote configure, you have to configure 3 phase setup on site before you can change settings via internet.
