My Remote Console says: #51 mk3 firmware needs update. My MultiPlus Compact 12/2000/80-30 is on version 481.
1) Do I NEED to update, or it is an option?
2) If skip update later shall I be able to update if necessary, or it is incremental?
3) Where can I see the release not for seeing what does the update do?

That update isn't for your MultiPlus, it's for the MK3 module in your GX device (whether that's a Cerbo, Ekrano, Venus, etc).
It is a required update.
