I plan on grounding this mppt to the negative bus bar which is connected to chassis ground. What size wire do I need from mppt screw on side to the negative bus bar?

Use a wire which is capable of carrying the fault current and allow circuit protection devices to activate.
Eg. If your MPPT is protected by a 60A fuse, then the ground wire must be able to carry this current until the fuse opens.
