I have 'mobile solar panels', when connected these are linked to my MPPT.
But what will happen during sustain mode, when the panels are not connected to the MPPT?

But what will happen during sustain mode, when the panels are not connected to the MPPT?

It stays in this mode, called Sustain, for seven days; and if by that time there has not been enough solar or wind, it will run a full charge cycle, charging the batteries to 100%. This will make sure they stay in an optimal condition as well as be ready for a next use.

If solar panels are not connected to the MPPT, then the MPPT will not charge the batteries, and -if not disconnected from the battery bank- will consume power at the rate defined in the technical specifications section of the MPPT's manual and also datasheet - you didn't mention which one you have, so I can't point you to the particular datasheet for it, but all datasheets and manuals are available by selecting your MPPT from this list: https://www.victronenergy.com/solar-charge-controllers
