I have 4 Gel batteries 12V 250Ah each. They are mounted in serial of two parallel sets that results in a bank of 24V. I guess in the end it is 24V 500Ah. Right? If that's correct, which smart shunt I should use? a 500, 1000 or 2000? Thanks.

The shunt choice is based on the power / current of your charging sources and loads. What is your highest charging power and highest load power. With a nominal 24V system, a 500A shunt will cover 12kW of charging or load and 500Ah of batteries would not really support that sort of load so 500A is probably the one you need, but confirm your charging and load power.
