I have 3 Bosch 140 AH house batteries and a man not sure what battery preset I should select. I currently using the option Gel Victron deep discharge(2). All the other options now have a green tick at the factory-recommended voltages. Is this correct?
It's not really possible to give a definitive answer because we have no information about your batteries.
The best thing would be for you to obtain the datasheet for your batteries from their manufacturer. If you study the datasheet it will detail the correct charging parameters and from there you'll be able to adjust the charging parameters accordingly.
