In the data sheet for the Quattro inverter 48/15000 it is written that the peak power is 25000W. How does it work?
what power consumption will be relevant for such an inverter?

Its worth watching the entire video.
You should size the inverter to the peak loads of your application. For example a Quattro 48/15000 can comfortably power continuous loads up to 12kW at 25 degrees centigrade. Remember the larger the inverter the greater its parasitic load is, meaning the energy needed by the inverter to power its internal electronics.
