Is it possible to feed our stack of 7 Pylontech us2000c batteries into the top and bottom simultaneously using a busbar and two battery feed cables?
If so, will this double the amps we can pull and push from the batteries?

It's not uncommon to wire a pack with "top and bottom" connections, it is also documented in their ops manual. In reality you should be sizing for system current.
Their example for the US2000C has 6 batteries in a stack, whether you can go 7 really depends what you intend to pull from it, do the math, and if in doubt just split the stacks.
It gains you nothing. If the cables are properly sized, the current limit is what the battery makers say.
Ideally you'll have a negative and positive busbar with equal length equal sized cables to the busbar. Then connect loads to the busbar. Battery/busbar cables should be sized for the current of a single battery. Busbar/load cables should be sized for the load on the cable.
